Filipino Hot Wings Adobo (aka Joe's signature wings).

Adobo Sauce for Wings

I use Swan's Filipino Soy Sauce
3/4 cup of Soy
1/4 cup of cane vinegar
1/3 cup brown sugar
1/8 teaspoon dried Thai Chili (substitutions, cayenne or red chili flakes)
1 cup water
1 tablespoon very finely minced onion
2 tablespoon very finely minced garlic
3 bay leaves
1/2 teaspoon cracked black pepper
You can add a little paprika for a nice amber shade.


Place all ingredients in a sauce pan, bring to a boil, reduce heat and simmer for 15 -20 minutes until the sauce reduces and thickens to coat the back of a spoon. Remove from heat... toss crisp, fried wings in sauce. Serve extra sauce on the side for dipping.

I did not strain my sauce when I created it, however if you prefer a clear sauce, by all means go ahead and strain it.

  2. I fixed this item on Christmas at the request of my sister and her family. I tweaked the recipe a little and added some fresh minced ginger to the Adobo Glaze Sauce. That is not traditional Filipino seasoning, but then again neither is the heat element added to the sauce... I also used some minced chives as a dusting on the wings this time. This recipe is morphing each time I prepare it... I should have it perfected by the first of the year... I am taking another run at it this New Years with Joe as the Guinea Pig.
